3 Tasty Recipes for Game Day!
Ingredients:
- 1 head of cauliflower, cut into florets
- 1 cup almond flour
- 1 cup unsweetened almond milk
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 cup buffalo sauce
Instructions:
- Preheat the oven to 450°F (230°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the almond flour, almond milk, garlic powder, and smoked paprika.
- Dip each cauliflower floret into the batter, letting any excess drip off, and place them on the prepared baking sheet.
- Bake for 20-25 minutes, until golden brown and crispy.
- Toss the baked cauliflower in buffalo sauce and return to the oven for an additional 5 minutes.
- Serve with celery sticks and vegan ranch dressing.
Ingredients:
- 1 zucchini, sliced
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 red onion, cut into chunks
- Wooden skewers, soaked in water
Chimichurri Sauce:
- 1 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 3 cloves garlic, minced
- 1/4 cup red wine vinegar
- 1/2 cup extra virgin olive oil
- Salt and pepper to taste
Instructions:
- Preheat the grill to medium-high heat.
- Thread the vegetables onto the soaked skewers.
- In a small bowl, whisk together all the chimichurri sauce ingredients.
- Grill the skewers for 10-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.
- Serve the grilled veggie skewers with a side of chimichurri sauce.
Ingredients:
- 1 lb ground turkey
- 1 onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes
- 1 cup low-sodium chicken broth
- 2 tablespoons chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Optional toppings: diced avocado, chopped cilantro, lime wedges
Instructions:
- In a large pot, cook the ground turkey over medium heat until browned.
- Add the onion, garlic, and bell pepper, and cook until softened.
- Stir in the black beans, diced tomatoes, chicken broth, chili powder, and cumin. Season with salt and pepper.
- Simmer the chili for 20-30 minutes, until the flavors have melded together.
- Serve the turkey and black bean chili with your choice of toppings.
